Caramel and Coconut Crepes
Try these crepes. They are so good! These crepes make a wonderful company dessert.

Cook Time: 10 minutes


3 MissionĀ® flour tortillas
1 2/3 cups caramel, (or Mexican Cajeta)
4 tbsp. rum
1 1/2 cups coffee ice cream
1 1/3 cups shredded, toasted coconut

In a frying pan, melt the caramel or Mexican cajeta, and add the rum. Leave to boil for 5 minutes, stirring once or twice with a wooden spoon and using great care. Dip the tortillas (one at a time and very carefully) to cover in the caramel. Using tongs or a fork, place 2 tortillas, folded into 4 parts on each plate, and add a scoop of coffee ice cream. Sprinkle with shredded coconut.
