chicken and sun-dried tomato stuffed shells
Serves: 6-8

Cook Time: 40 minutes


8 oz sliced fresh mushrooms
8-10 sun dried tomatoes, packed in oil, drained and chopped
2 cloves garlic
1/4 cup chopped parsley
2 teaspoons dried basil leaves
2 talbespoons olive oil
1 pound boneless skinless chicken breast, cooked and finely chopped
1 egg
2 (26-oz) jars pasta sauce

cook noodles as directed on package. Drain. Preheat oven to 350 degrees. In a food processsor, combine muchrooms, tomatoes, and garlic; blend until finely chopped. In a skillet, over medium heat, cook and stir muchroom mixture, parsley and basil in oil until tender and thickened. Cool. Stir in chicken and egg. Stuff shells. Spread 2C. of the sauce in pan. arrange shells and spoon remainder of the sauce over the shells. Cover. Bake 30 minutes of until hot and bubbly. Sprinkle w/parmesan cheese if desired.
