Creamy Egg Salad
Cream cheese makes this extra rich. Spread the egg salad on bread, crackers, or serve it with lettuce and tomatoes.

1 package cream cheese, (3 ounces) softened
1/4 cup mayonnaise
1/2 teaspoon salt
1/8 teaspoon Pepper
1/4 cup green pepper, finely chopped or 1/4 cup sweet red pepper, finely chopped
1/4 cup celery, finely chopped
1/4 cup sweet pickle relish
2 tablespoons fresh parsley, minced
8 eggs, hard-cooked, chopped

In a mixing bowl, beat cream cheese, mayonnaise, salt and pepper until smooth. Add green pepper, celery, relish and parsley. Fold in eggs. Refrigerate until serving.
