Chicken and Pesto Wraps
A quick supper or lunch dish -- and a terrific way to use leftover chicken. Keep some pesto in the 'fridge to make this super-easy sandwich anytime!

4 tablespoons pesto, refrigerated
4 tablespoons mayonnaise
4 flour tortillas
4 Romaine lettuce leaves, torn into large pieces
2 cups sliced cooked chicken
1 cup chopped tomato, finely chopped
1/2 cup shredded mozzarella cheese, finely shredded

Mix pesto and mayonnaise and spread evenly over tortillas. Top tortillas with lettuce, chicken, tomatoes and cheese. Roll up tightly to serve.

Serving Suggestion:  Serve with deli cole slaw or pasta salad.
