Chicken Pasta Toss
A great summer dish!
Serves: 4
Prep Time: 20 minutes
Cook Time: 5 minutes


1/2 box (16 oz.) penne pasta
1 tablespoon Vegetable Oil
2 garlic cloves, minced
1 cup sliced fresh mushrooms
1 red bell pepper, seeded and cut into thin strips
1 can (10 3/4 oz.) condensed cream of mushroom soup
1/2 cup milk
2 tablespoons dry sherry
1 package (10 oz.) PERDUE® SHORT CUTS® Honey Roasted Carved Chicken Breast
1 box (10 oz.) frozen chopped spinach, thawed and squeezed dry
Salt and freshly ground pepper, to taste

Cook pasta according to package directions; drain well. Meanwhile, in a large skillet, over medium heat, heat oil. Add garlic, mushrooms and red pepper; saute 2 to 3 minutes until tender. Stir in soup, milk and sherry; blend well and bring to a simmer. Add chicken and spinach; salt and pepper to taste. Cook 3 minutes until heated through. Add drained pasta; toss to combine.
