Chicken and Vegetable Stir-Fry
Makes a quick and tasty dinner!

2 tablespoons Vegetable Oil
1 cup chopped onion
3 cups assorted vegetables, cut-up
1/4 cup soy sauce
1 package (10 oz.) PERDUE® SHORT CUTS® Lemon Pepper Seasoned Carved Chicken
4 cups bean sprouts

In a 12-inch skillet over medium-high heat, heat oil. Add onion; cook 2 minutes or until onion is softened, stirring occasionally. Stir in vegetables, soy sauce and 3 tablespoons water. Cover and simmer over low heat 2 minutes. Stir in chicken and bean sprouts; cover and simmer 2 minutes or until chicken is hot and vegetables are tender and crisp. Serve with hot cooked rice, if desired.
