FamilyTime Raspberry Jam
Make this easy jam with perfectly ripe raspberries. If you pick your own, this is a great way to use the berries.
Serves: about 2 pints
Prep Time: 10 minutes
Cook Time: 20 to 30 minutes


4 cups fresh raspberries
3 cups sugar

Put the raspberries in a large pot and crush them with a fork or the back of a spoon. Cook over medium heat for about 10 minutes until the juices start to evaporate.

Add the sugar, stir well, and bring to a boil over medium-high heat. Cook until the berries start to dissolve and a candy thermometer registers 214 degrees F.

Skim off any foam that rises to the surface and let the jam mixture cool slightly. Spoon into sterilized jars and seal with lids or paraffin.

If using paraffin, let it cool and set before screwing the lids on the jars.

Let the jars cool completely before storing. Set them on a double thickness of kitchen towel and leave some space between each jar for air to circulate.

When the jars are cool, store in a cool, dark cupboard for up to a year. Refrigerate after opening.
