Chicken Cacciatore
Using jarred Italian sauce and shredded cheeses makes this classic Italian dish quick and easy -- and so good!
Serves: 4 to 6
Prep Time: 10 minutes
Cook Time: 20 to 25 minutes


2 tablespoons flour
1 tablespoon dried oregano
4 boneless chicken breasts, about 1 pound
2 tablespoons olive oil
2 cups sliced fresh mushrooms, about 8 ounces
1/2 cup chopped red onion
1 (26-ounce) jar Italian sauce
1 cup (about 4 ounces) shredded mozzarella cheese
8 ounces fettuccine, cooked as package directs

In a shallow dish, combine the flour and Italian seasoning. Coat the chicken with the mixture. In a large skillet, over medium-high heat, brown the chicken in hot oil; remove the chicken from the skillet.

Add the mushrooms and onion to skillet; cook and stir until tender. Add the pasta sauce and chicken. Cover and simmer for 15 minutes or until the chicken is fully cooked. Top each chicken breast with cheese. Serve with hot pasta.

Serving Suggestion:  Serve with fresh green salad from the salad bar.
