Bittersweet Chocolate Glaze
This glaze covers cakes beautifully although it can be used as a chocolate sauce, too.
Serves: makes about 3/4 cup
Prep Time: 10 minutes
Cook Time: about 5 minutes


6 ounces bittersweet chocolate, coarsely chopped
1 ounce unsweetened chocolate, coarsely chopped
2 tablespoons light corn syrup
3 tablespoons unsalted butter, softened

Put the bittersweet and unsweetened chocolate and the corn syrup in the top of a double boiler set over hot, not simmering, water. Stir until the chocolate melts and the chocolate is smooth. Remove from the heat.

Add the butter, a tablespoon at a time, stirring well after each addition until the butter is incorporated.

While the glaze is still warm, pour it over the cake. If it is not liquid enough to pour, heat gently, stirring with a wooden spoon.
